Hummingbird bread

*Ingredients

°1 1/2 cups flour

°1 cup granulated sugar

°3/4 cup of oil

°2 mashed spotted bananas

°2 beaten eggs

°½ cup canned pineapple chunks, undrained

°1/2 cup chopped American walnuts

°1/4 cup raisins

°1/2 tablespoon of vanilla extract

°1 teaspoon of baking soda

°1/4 teaspoon salt

°1/2 teaspoon cinnamon

* Preparation

Preheat oven to 350°F and grease a 9″ x 5″ baking pan with flour.

In a medium bowl, whisk together the flour, baking soda, salt, sugar, and cinnamon. Add the eggs and oil and stir to blend.

Add the vanilla, pineapple, banana, walnuts, and raisins and pour the mixture into the prepared pan.

Place the skillet in the oven and bake until a toothpick inserted in the center comes out clean, about 1 hour. (But start checking at 45 minutes just to be safe.) If the cake is browning too quickly, place a piece of aluminum foil on top.

Allow the cake to cool in the pan for 20 minutes before removing it to cool completely. Serve & Enjoy !
